Danielle Arsenault, founder of Pachavega Living Foods Education, is a lover of many things. She is a passionate Raw Food Chef, Spanish teacher, cave guide, slack liner, rock climber, mountain lover, cookbook author and whole foods nutrition and lifestyle consultant. “Pacha” comes from the word “Pachamama”, a native word of the indigenous Quechua peoples from South America which means “Mother Earth”. “Vega” is for Danielle’s love for vegetables. Pachavega always prepares organic, plant-based whole foods with mindful tenderness and is committed to compassion for the earth and all things on it.She can become lost in the folds of nomadic travels now and then but still finds time to pursue her passions. For almost 10 years, she travelled the world and discovered isolated corners of over 25 countries (and counting). In March of 2012, she completed a ukulele-infused album under her musical pseudonym, Mustache Fable. She has also received a Permaculture Design Certificate from Sadhana Forest in Haiti as well as a Living Foods Lifestyle Education Certification from the Ann Wigmore institute in Puerto Rico. Upon completion of the 200 hour Raw Food Educator Program from Raw Foundation Culinary Arts Institute in Vancouver, BC, she knew it was her calling to strive to educate herself in depth about the healing power of whole foods and a healthy lifestyle and therefore became a professor at Pacific Rim College in Victoria, BC, and developed and taught Holistic Nutrition Cooking, Superfoods and Whole Foods Preparation classes. She also became a Certified Colon Hydrotherapist in 2015 and in early 2016 she was hired on at Aqua Wellnes Resort in Nicaragua as a Raw Food Chef Consultant and guest chef to develop several new healthy menu items for their wellness menu.  She is also a contributor to the popular health blog, youngandraw.com and healingthebody.ca. She continues to further her study in the science behind nutrition. In 2016 she became an Ambassador for Journey. Journey helps people to see the impact they’ve made through philanthropic donations and funding by traveling to meet locals, getting hands dirty by building together and afterwards reflecting and reconnecting, and re-framing the world.Always with an eye for fresh foods, Danielle has discovered endless combinations and hidden secrets in nutrition – especially in raw, living foods. She has had the pleasure of collaborating with the lovely Jessica Perlaza by co-creating a vegan, gluten-free cookbook series inspired by seasonal, whole foods. They call themselves the kitchens of pinch and dash. You can find these cookbooks online. Danielle has also recently published her own recipe book, Heal and Ignite; 55 Whole Food, Plant-Based Recipes to Heal your Body and Ignite your Spirit! The hard copy will be available early summer 2017.Looking for some grounding roots, she founded Pachavega Living Foods Education to inspire people to take charge of their happiness and health by eating mindfully. She offers whole foods, plant-based catering, nutritional consultation and raw food chef certification including the most amazing 45 hour Healing Whole Foods Preparation Certificate and the 70 hour *Heal and Ignite* Raw Chef Certificate.
